Wow...this was FANTASTIC! Te only thing I did differently was to add some sundried tomatoes on top of the goat cheese before I folded the breast closed. If you added mushrooms, I think it would be an easy copycat of Carrabbas stuffed chicken breast

My family loves this recipe! I do make some changes. I add mushrooms(rough chopped about 4 ounces fresh button), garlic (about 1 clover per breast) and sundried tomatoes (about 1 tablespoon for 3 breasts) to it. I also add a tablespoon of honey to the balsamic vinegar as it reduces. Sprinkle fresh parsley on top. I serve it with roasted vegetables and mashed potatoes for a meal that even my extremely picky daughter loves.

Two things about this recipe: you need to love balsamic and goat cheese because they dominate equally. I reduced the balsamic to a sweet syrupy consistency which was decadently rich. My chicken breast was HUMONGOUS, so I pounded it out a little, spread the goat cheese on it, drizzled some balsamic, and then rolled the chicken breast which made for a really nice presentation when sliced. I think the goat cheese filling was longing for some other ingredients, so I will try that the next time. Sauteed some mushrooms and topped the chicken breasts when serving. We liked this, but I think it needs a little tweaking (but not much) to reach 5 stars.

Wow, this was so fast and so good. I pounded out the chicken breasts and spread on the goat cheese. Used finely chopped onions and a couple of tablespoons of honey in the balsamic reduction. Used 1/2 cup of balsamic and did not reduce it too far, kept it thin and brushed it on the inside of the breast over the goat cheese. Rolled it up and skewered it, dusted the outside of the breast with seasoning salt. 22 minutes at 350 in a convection oven.

This was a really good recipe! I made it exactly except for the shallots (used an onion instead) and it was delicious. I have to say if the vinegar flavor is too strong you are probably not reducing it slowly enough or long enough. It does have a great flavor.

I added fresh basil to the cheese stuffing, added chicken broth and brown sugar to the balsamic reduction. Incredibly good!

Impressive for company. VERY tasty. I think thighs work better than breasts because you don't have to slice them thinner. I sauted mushrooms & onions separately, then added to the balsamic later, but maybe you wouldn't have to do those separately. I added sundried tomatoes to the cheese. More time intensive prep than indicated

I used onions instead of shallots, added mushrooms to the stuffing mixture, and seasoned the chicken with garlic salt and Italian seasoning!!! Turned out great!

30 minutes in the oven turned them to leather. Needed like 20 minutes tops. I also found the balsamic reduction to be a bit overpowering.

Enjoyed this recipe immensely, but I did lighten up the balsamic glaze. I used a pre-purchased one, and lightly sprinkled it on the inside and outside of the chicken, so it wasn't overpowering. More would have been better, but not everyone in my home enjoys balsamic vinegar. I also used goat cheese with wild blueberries. Topped it with cranberry sauce when I served it, and it was delicious.

Delicious, and so easy! I didn't split the chicken breasts... just piled the ingredients on top. Used a premade balsamic glaze.

I used chicken thighs and sheep feta instead. They came out perfectly. I paired them with balsamic vinegar butter veggie mix and baguette. A yummy and easy to make dinner. My guests absolutely loved it! Will definitely make this again.

I added sundried tomatoes on top of the goat cheese, and it was excellent! Be sure to use good quality balsamic and reduce it well. I am giving 4 stars instead of 5 because the cooking time is way off. My breasts were done after 20 minutes.

I made this recipe for dinner and my family loved it. I cooked three chicken breasts instead of two and increased the goat cheese to 3 oz. (1 oz) per breast. I made the sauce as per the recipe but added mushrooms which I cooked with the onions. I also added about two tablespoons of honey to cut the bitterness of the balsamic vinegar. My husband isn't a huge fan of chicken but gave it high marks for chicken. However, my father in law over ruled him and gave it an A+.

Will definitely make this again. I mixed very finely chopped mushrooms (quickly in the blender) in the balsamic sauce with a bit of garlic. This recipe is fantastic.

Added a bit of honey to the balsamic reduction as another reviewer suggested. Also added a sundried tomato pesto to the inside of the chicken. Baked for 20 minutes.

AMAZING!!!! So good and easy. Per suggestions the first time I made I did use sun-dried tomatoes on top of the cheese. It is not necessary. Love this dish.

Delicious!! I have made it like the recipe and it was a hit! I have also made it and added some Italian herbs and garlic to goat cheese filling, as well as some sun dried tomatoes and baby Bella mushrooms in with the goat cheese and it was AMAZING! Everyone thought it was from a gourmet restaurant! Seems you can play around with the filling with the goat cheese depending on your tastebuds. Definitely a new recipe to impress any crowd. Doesn't hurt that is pretty simple to make too!

This was a huge hit at my house. The balsamic reduction was very easy to make and the chicken turned out tender, juicy and flavorful. Only change was to increase the goat cheese to 3 oz per breast instead of 1. The cheese melts somewhat into the sauce and balances out the intensity of the balsamic. Adding blueberries or blackberries to the reduction just before baking will be a nice addition for next time. Will make this for company and serve with mixed greens, quinoa-rice and crusty bread.

I loved this recipe! My family and I really enjoy balsamic flavor, so the goat cheese balanced the balsamic. It was a nice twist to the ususal chicken breast dinner.

Wow! This super-easy recipe is incredibly flavorful and delicious. Quick to put together and perfect for people who love the zippy flavor of vinegar (If you love salt & vinegar chips and Caprese salad, this dish is for you!). It's definitely going to become a part of our family's regular rotation of favorite dishes.

Followed the recipe as is but subbed the breasts for thighs.
As with some comments regarding oven/baking time, we began checking after 20 minutes. It was a go at 25. So people's oven mileage may vary, something to think about.
Delicious but then we like balsamic and we like goat cheese and we like chicken, so it was a plus, plus, plus for us.

This is definitely a keeper! It was refreshing to actually find a recipe that's designed for 2 servings. I made a couple of additions that were suggested by previous review... added a little honey to the vinegar and added some chopped sundried tomatoes to the filling. The one mistake I made was not giving the sauce enough time to reduce before I drizzled it on the filling. Still came out great. Tasty, tender chicken. I also sprayed some cooking spray in the baking dish since I thought the sauce would be quite sticky. Made cleanup a breeze.

So here are my modifications: • I had fat chicken breasts, and was cooking for four people. I cut them down the center to make a pocket/flap in each breast. I marinated the chicken in the balsamic vinegar over night in a Ziploc bag. • I then pan seared the chicken breasts on both sides to brown the surface. Also seals the balsamic flavor into the breast. • My goat cheese mixture was any herbs I had around, arugula, garlic powder, salt and pepper. This was thickly spread into each pocket. • I used three thinly sliced shallots, fried them in oil to just brown, drained on a paper towel and then placed a layer of shallots over the goat cheese layer. • Placed stuffed chicken breasts in a roasting pan, covered with the remainder of the balsamic marinade and roasted for 30-45 minutes at 350. • Served with couscous. The goat cheese flowing out into the vinegar made the most delicious sauce and the chicken was tender and moist.

Loved it. But it was not enough cheese for me. In the later attempts I increased to 2oz per breast. I also experimented with goat cheeses and honey one is the best for this

This was FANTASTIC! I pounded the breasts to 1/4 inch thickness and made a roll-up. A for comments that the balsamic reduction was too strong, it definitely must have been from not reducing it for long enough. This recipe is a keeper!

Overall I think the recipe was very good. I would recommend adding some salt and pepper to the chicken prior to cooking.
The next time I make it, I'll probably retain some of the balsamic glaze and use it as a sauce.

So yummy! My husband has requested this on several occasions and it has quickly become part of our meal rotation. So easy and flavorful. The only thing I did differently was salt and pepper the chicken itself.

Made this tonight with homemade goat cheese. It was good but not great. Maybe some additional seasoning would have helped or a little more goat cheese. I also think that next time I may do a quick sauté of the chicken to brown it a little before putting in the oven. I'll try this again but with a few tweaks. Thanks for the recipe.

I agree with several reviews that this has a tad bit too much Balsamic vinegar taste. The Balsamic over powers the flavors. I added some chicken stock to cut this flavor down which helped. Reducing the Balsamic did not remove the overpowering flavor. Adding plenty of Goat cheese helps too.

This recipe was okay, but I have another goat cheese stuffed chicken breast recipe that I find more flavorful. This isn't a bad recipe, just less exciting than I had hoped.

I think my chicken breasts were too thick. There wasn't enough filling for the thickness of the breasts. The taste of the reduction was good but I think next time I'll add some of the add ons other's have added like the sun dried tomatoes and mushrooms. It was a little lack luster for me when I followed it to the T.

So good! I'm not a fan of mushrooms but sauteed some for my wife. I did eat a couple of them and they seemed to help cut the sharpness of the goat cheese. I'm going to try artichoke hearts or roasted red peppers next time; yes, there will definitely be a next time. I also pan seared the chicken when it came out of the oven just for looks.

I pounded and rolled instead of butterflying each breast. Per other reviews, I added garlic and sun-dried tomatoes (1 clove and 1/2 tsp per breast) but could have doubled it. I cut the balsamic vinegar in half and it was more than enough even after reduction. Topped with sauteed mushrooms. Don't overdo the goat cheese

Nice recipe, just a couple of changes next time: 1. Add sundried tomatoes as some have recommended; 2. Salt & pepper the chicken; 3. Add a little of butter on the top. About the time, I did 23 minutes and I was great like that.

Deeeelicious! I didn't use a whole cup of balsamic but cut it with some red wine I happened to be drinking at the time. I followed someone else's suggesting and added my favorite ingredients that go with goat cheese: sundried tomatoes and fresh Thai basil. We both wanted another piece, so I'll have to make it again real soon!

Made it with a few adjustments. First added garlic to the olive oil/shallots then layered prosciutto on the butterflied chicken followed with goat cheese, diced sautéed mushrooms and the balsamic mix. Mouthwatering

This was excellent and easy and all of my kids loved it! As suggested I added sun dried tomatoes on top of the goat cheese and added honey to the balsamic and reduced to a thick consistency. This will be a staple and when my kids get sick if it i will try replacing the sun dried tomatoes with sautéed mushrooms as also suggested.

I did not like the sour cheese in the chicken with the balsamic reduction. My husband loved the balsamic glaze. (I added about 1 oz real maple syrup to cut the bitterness) I will not make it again, but I did like how quick and fancy it was!!

Paired this up with some linguine in garlic butter and the rest of the goat cheese. But I think next time I might try a bed of wilted spinach. It would make a perfect foil for the balsamic reduction.

Followed the recipe closely I pounded the chicken and folded over the cheese and placed seam side down in baking dish. I do think mushrooms would be an ideal addition to the chicken.

I made several changes combined after reading the reviews. 1) I seasoned the chicken with salt, pepper, and italian seasoning on the outside and coated the inside with fresh grated garlic. 2) I used 2 shallots, 4 cloves of grated garlic, 3/4 cup balsamic, 3/4 cup chicken stock, and 2 TBSP honey. 3) I added julienne sundried tomatoes and whole basil leaves on top of the goat cheese before spooning on some balsamic mixture. 4) While the chicken was cooking I sautéed sliced mushrooms in butter, salt, and pepper to put on top of my chicken breasts before basting with pan juices and serving. Having it made this way was AMAZING, and I can't help but think if I had just followed the original recipe it would have a been a bit blasé for my taste. Good base recipe to use for experimenting though for sure.

I swapped the goat cheese for cream cheese for some pickier palates. As another person mentioned, the balsamic vinegar is very intense, but I liked the sweetness it added. The chicken was a bit plain, I plan to salt and pepper the outside of the little rolls before cooking next time to see if that fixes it. Overall, really easy and very good.

This was delicious! The whole family loved it! The balsamic reduction was extremely mild and sweet with nothing added. I think reviewers who found the balsamic overwhelming definitely didn't reduce long enough. My chicken wasn't fat enough to make a "book" so I pounded them flat, put in the filling (I added spinach) and folded them over. Next time (and there will definitely be a next time!) I'll probably make a sandwich with 2 breasts. I added sauteed mushrooms to top it off and served with roasted mini potatoes. Thanks so much for this delicious recipe that's fancy enough for guests and super easy for weeknight dinners!
